The detailed research on green and alternative protein sources plays a significant role in the future of food products accompanying the growing demand for protein as a nutrient. In our laboratory, we investigate plant proteins, which are obtained by various protein extraction methods. The extraction of proteins is crucial for obtaining a high yield from specific sources and enhancing the analysis. After obtaining our protein, we are using mass spectrometry for both qualitative and quantitative analysis. The food analysis is elevated to a new level by providing more comprehensive insights into protein composition as well as the nutritional value of the food.
